Pork tenderloin with pesto


A delicious way to prepare pork tenderloin
All we need is:
1.    2 Pork tenderloins (they weight about 350 grams each)
2.    Some butter
3.    Parsley
4.    Rocket
5.    Parmesan
6.    Cone and/or hazelnuts
7.    Roasted garlic
8.    Extra virgin olive oil
9.    Salt and pepper
            Firstly we are going to prepare the parsley-rocket pesto.
I think that using half bunch of parsley and half bunch of rocket is good. Although, it’s up to you to control the part of parsley and rocket used. (Well, rocket is more “spicy” than parsley)
Put both of them in then blender.
Add 50 grams of cone and/or hazelnuts.
Add some parmesan. I think 3 large tablespoons is ok.
Add two cloves of roasted garlic. You can also use raw but its taste will be much stronger.
Season with some salt and pepper and start blending!
Add slowly some extra virgin olive oil until your pesto becomes smooth. The first part is over!

Now, cut the pork tenderloin vertical in pieces at a width of about 1 cm.
Season the pork pieces and sauté them in a pan with butter and some fresh thyme.
After the pork tenderloin has been sautéed, season each piece with a large tablespoon of pesto.
